1 litre of Beef or Lamb Stock
4 tablespoons of Flour
6 slices of Bread
6 tablespoons of Butter
6 tablespoons of Olive Oil
2 tablespoons of Salt
Pinch of Paprika
How to prepare
This recipe makes 6 servings
Melt 4 tablespoons of butter in a pan, add the flour and cook until a light brown colour.
Slowly add the stock constantly stirring until it is smooth and creamy.
Cover the pan and let it simmer for 15 minutes.
Dice the bread and fry in the olive oil until golden brown.
In another pan heat the remaining butter, add the paprika and as soon as it bubbles pour over the soup.
Serve hot garnished with the fried croutons.
