Red Lentil Soup
200gr rinsed Red Lentils
1 diced Onion
1 diced small Carrot chopped
1 tablespoon chopped tinned Tomato
1 teaspoon of Red Pepper paste
1½ cubes Beef Stock
2 tablespoons Lemon Juice
Red Pepper Sauce:
1 tablespoon of Butter
½ teaspoon of Paprika
½ teaspoon of Cayenne Pepper
How to prepare
Add all the ingredients to a pan and bring to a boil.
Turn down the heat and simmer for 20 minutes.
Once cooked blend the liquid until smooth (if its too thick hot water may be added).
Pour the soup into serving bowls.
Meanwhile melt the butter in a small pan.
Add the paprika and cayenne pepper until it bubbles then pour it over the soup.
Sprinkle on some drops of lemon juice and serve immediately.
