Tomato Soup with Cream


300ml chopped tinned Tomatoes
1 chopped small Onion
1 tablespoon plus 1 teaspoon of Butter
1 pinch of Oregano
1 Bay Leaf
1 tablespoon of chopped Parsley Leaf
1 pinch of Sugar
1 pinch of Nutmeg
½ teaspoon of Salt
½ teaspoon of Pepper
480ml of warm Chicken stock
1 teaspoon of Flour
80ml Cream

How to prepare

Add 1 teaspoon of butter to the pan, then the onion and lightly fry for 5 minutes.
Add the tomato, parsley, bay leaf, oregano, sugar, nutmeg, salt and pepper.
Cook on a medium heat for 15 minutes then add the chicken stock.
Place the lid on the pan and continue to cook on a medium heat for approx. 10 minutes.
When the ingredients are cooked, discard the bay leaf and blend the mixture.
Meanwhile melt 1 tablespoon of butter in a pan, remove from the heat and whisk in the flour.
Return to the heat and slowly stir in the tomato liquid from the blender.
Next add the cream and keep stirring bringing the liquid to a boil.
Remove from the heat place in bowls and serve immediately.
The Turkish name for this soup is Kremali Domates Corbasi.
