Tomato Soup with Rice
1 litre of Beef or Lamb Stock
65gr of Rice
4 large peeled and chopped Tomatoes or 150gr of Tomato Paste
1 tablespoon of Flour
2 tablespoons of Butter
2 teaspoons of Salt
How to prepare
This recipe makes 6 servings.
Boil the rice in 300ml of water, drain and set aside.
Melt the butter in a pan and add the tomatoes or paste dissolved in 120ml of water.
Allow to cook for 15 minutes stirring occasionally.
Add the flour and salt stirring constantly and cook for 2 minutes.
Slowly add the stock, cover and simmer on low for 20 minutes.
Add the cooked rice and simmer for a further 5 minutes.
Serve hot in bowls.
