Apple Cookie Rolls

Apple Cookie Rolls


For the dough:
250gr of unsalted Butter (room temperature)
1 tablespoon of Yogurt
Zest of ½ lemon
10gr of Icing Sugar
1 teaspoon of Vanilla Extract
240ml of plain Flour
½ teaspoon of Baking Powder
 For the filling:
3 peeled and grated Granny Smith Apples
112gr of Sugar
60gr chopped Walnuts or Hazelnuts
1 teaspoon of Cinnamon

How to prepare

This recipe makes 18-20 Apple Cookie Rolls.
Preheat the oven 190˚C.
Cook the apple and sugar together until all the liquid has evaporated.
Turn off the heat then add the cinnamon and nuts, stir in well and leave to cool.
In a large bowl combine and knead well the dough ingredients.
Divide the dough into golf ball sized pieces (approx. 10-12) and flatten with the palm of your hand.
Place one tablespoon of the filling in the centre of each piece.
Fold the dough from the left side to the right side.
Place them on an oven tray lined with parchment paper and bake for 25 minutes.
As soon as you take them from the oven use a small sieve and sprinkle them with icing sugar.
The Turkish name for this dish is Elmali Kurabiye
