3 extra large Eggs (room temperature)
225gr of Sugar
60ml of Milk (room temperature)
60ml of Extra Virgin Olive Oil
Zest of one Lemon
1 teaspoon of Vanilla Extract
188gr of plain Flour
1 teaspoon of Baking Powder
½ teaspoon of Cinnamon
1½ peeled, cored, diced Red Apples dusted with flour
60gr chopped Walnuts
How to prepare
You will need a cake tin oiled and dusted with flour.
Preheat the oven to 180˚C.
Use a hand blender to beat the eggs with sugar until creamed and doubled in volume.
Add the milk, oil, lemon zest and vanilla extract.
Now mix in the flour, baking powder and cinnamon.
Add the apples and walnuts and pour the batter into the cake tin.
Place the cake tin on the middle shelf of the oven and bake for 45 minutes (or until a toothpick can be removed cleanly).
Remove from the oven let it stand for 30 minutes then place on a wire rack to cool.
