Ingredients

For the dough:
150gr of plain Flour plus 2 tablespoons
125gr of unsalted butter (room temperature)
86gr of Sugar
1 Egg Yolk
Zest of one Orange
For the orange butter cream:
2 tablespoons of unsalted butter (room temperature)
75g of Icing Sugar
1 teaspoon of Orange Zest
1 tablespoon of Orange Juice

How to prepare

Preheat the oven to 180˚C.
Cream together using a wooden spoon the butter and sugar or use a food processor.
Add the egg yolk and orange zest, then slowly add the flour and knead by hand ensuring not to overwork the dough.
When the dough comes together, cover it with cling film and place in the fridge for 15 minutes.
Use a rolling pin to roll out the dough until its 0.5cm thick.
With a 5cm cookie cutter cut the dough into 24 pieces and place them on an oven tray lined with parchment paper.
Put the oven tray on the centre shelf of the oven and bake for 15 minutes.
Remove from the oven and place on a wire rack to cool down.
Meanwhile add the butter to a bowl and slowly whisk in the icing sugar.
Stir in the orange zest and orange juice.
Turn 12 of the biscuits upside down, spread them with the filling and place one of the other halves on top.
Sprinkle with icing sugar.
