Crispy Borek with Spinach
3 sheets of Yufka Pastry
3 tablespoons of Flour
250gr of crumbled Feta Cheese
500gr of chopped Spinach
1 finely chopped Onion
1 tablespoon of Tomato Paste
1 tablespoon of Black Cumin Seeds
How to prepare
Preheat the oven to 180˚C.
Heat 2 tablespoons of sunflower oil in a pan, add the onion and cook until soft.
Add the spinach and continue to cook until soft.
Place a pastry sheet on the counter and brush with sunflower oil.
Sprinkle on 1 tablespoon of flour and fold in two to form a D shape.
Place the spinach on the long side, add the feta cheese on top then roll the pastry up.
Cut the rolled pastry into 6cm long sections and place on a baking sheet.
Brush the pieces with a mix of sunflower oil and egg yolk then sprinkle on the cumin seeds.
Place in the oven and cook until the tops are golden brown.
