Ingredients

350gr of Flour
3 Eggs
2 tablespoons of Water
1 tablespoon of Salt
100gr of Corn Flour
6 tablespoons of melted Butter
For the meat filling:
200gr lean minced Beef
2 tablespoons of Butter
3 chopped Onions
4 tablespoons chopped Parsley
1 teaspoon of Salt
½ teaspoon of Pepper
For the cheese filling:
250gr mashed white Cheese
1 Egg
120ml Milk
4 tablespoons chopped Dill
4 tablespoons chopped Parsley

How to prepare

This recipe makes 6 servings.
You will need a straight-sided 25cm diameter baking pan, buttered.
Sift the flour into a bowl and make a well in the centre.
Add the eggs, water and salt to the centre, mix and knead into dough.
Divide the dough into 9 pieces making one of them larger than the rest.
Flatten down each piece, cover with a damp cloth and allow them to stand for 30 minutes.
For the meat filling, brown the onions in butter, add the meat and salt.
Stir constantly until the liquid evaporates then add the salt, pepper and parsley and mix well.
For the cheese filling, add the parsley, dill and egg to the mashed cheese mixing well.
Roll out the larger piece of dough making it double the size of the baking pan.
Place it on the pan draping the dough over the edges.
Roll out the remaining 8 pieces.
Place 4 of them, one on top of the other, sprinkling on corn flour in between each layer.
Roll them out making them as large as the baking pan and repeat with the remaining 4 pieces.
Add 4 litres of water with 1½ tablespoons of salt to a large pan and bring up to a boil.
Place the dough pieces in the water one at a time and cook for one minute each.
Remove taking care not to tear them and dip into a bowl of cold water.
Place 4 pieces in the buttered baking pan, spreading melted butter in between each layer.
Then add the either the meat or cheese filling.
Place the remaining boiled dough pieces one at a time, again spreading on melted butter.
Fold over the edges of the first piece and spread with remaining melted butter.
Place the tray in a medium hot oven and bake until golden brown, around 1½ hours.
Remove from the oven and turn it upside down onto a round serving dish
Serve immediately.
